Arginine Metabolism by Bacillus subtilis and Zygosaccharomyces rouxii Isolated from Korean Soysauce

Abstract

|
Bacillus stubtilis J1 and Zygosaccharomyces rouxii Y101, isolated from Korean soysauce, were investigated for the pathway to metabolize arginine in the defined medium. The activities of three enzymes of arginine deiminase pathway in cell extracts of B. subtilis J1 were higher than those of Z. rouxi Y101. Activities of arginase and urease were not detected in cell extracts of both microorganisms grown in the medium including arginine. Results suggest that arginine metabolism by B. subtilus and Z. rouxii took place not via arginase-urease pathway but via arginine deiminase pathway, giving rise to citrulline, carbamyl phosphate, and ammonia.
